INGREDIENTS:
- 1# Chicken Breasts
- 1 (15oz) can black beans, rinsed
- 2 bell peppers, diced
- 2c chicken broth
- 1c salsa (for a spicy soup, add hot salsa or a few dashes of hot sauce)
- 1 (15oz) can tomatoes
- 1 red onion, diced
- 3 cloves garlic, minced
- 1Tbsp ground cumin
- 1Tbsp chili powder
- 1tsp kosher salt
- For Serving:
- Sliced Avocado
- Sour Cream
- Shredded Cheese
- Tortilla Chips
- Chopped Cilantro
DIRECTIONS:
- Combine all ingredients in slow cooker.
- Cover and cook on low until chicken is tender and falling apart, 5-6 hours.
- Remove chicken and dice/shred as desired, return to slow cooker.
- If using cheese, sprinkle on top of soup and cover for 5 minutes or until cheese has melted.
- Serve soup with crushed tortilla chips and any other taco compatible toppings.
