Slow Cooker Chicken Tortilla Soup

INGREDIENTS:

  • 1# Chicken Breasts
  • 1 (15oz) can black beans, rinsed
  • 2 bell peppers, diced
  • 2c chicken broth
  • 1c salsa (for a spicy soup, add hot salsa or a few dashes of hot sauce)
  • 1 (15oz) can tomatoes
  • 1 red onion, diced
  • 3 cloves garlic, minced
  • 1Tbsp ground cumin
  • 1Tbsp chili powder
  • 1tsp kosher salt
  • For Serving:
    • Sliced Avocado
    • Sour Cream
    • Shredded Cheese
    • Tortilla Chips
    • Chopped Cilantro

DIRECTIONS:

  1. Combine all ingredients in slow cooker.
  2. Cover and cook on low until chicken is tender and falling apart, 5-6 hours.
  3. Remove chicken and dice/shred as desired, return to slow cooker.
  4. If using cheese, sprinkle on top of soup and cover for 5 minutes or until cheese has melted.
  5. Serve soup with crushed tortilla chips and any other taco compatible toppings.
